To watch YouTube videos without any filters, you'll have to disable Restricted Mode. You can do that on the YouTube website or mobile app.
To turn off your Roku, you'll probably need to unplug it. The only exceptions are the Roku 4 and Roku TV, which you can turn off regularly.
